The long awaited Mash Potato Recipe
My mom has made these for years. She always doubles the recipe as everyone in my family loves them!
They are creamy, tasty and never fail.. can you really fail at mash potatoes? HMM I don't think so! The biggest benefit of these is the make ahead ability! You make them, keep them in the fridge and when you need them.. pull them out, and bake! Great Christmas day time saver!
If you dont believe me make a mini batch and give it a try. You will be serving these up at your Christmas Dinner! Easy, Time Saving and so YUMMY!!
8 med potatoes
4 oz whipped cream cheese
1 beaten egg
2 Tbs finely chopped green onion
2 tsp chopped parsley
2 Tbs melted butter
Mash potatoes add whipped cream cheese. Beat well. Stir in egg green onion and parsley.
Place in well greased casserole dish. Brush with melted butter. Sprinkle lightly with paprika
Bake in a 350 oven for 40 45 min.
Makes 6-8 servings. ** we usually gobble up and make double a recipe as they are YUMMY!
Can make a few days ahead and will keep in fridge!
