Quick and easy breakfast recipes

Breakfast is the most important meal of the day, and with these simple recipes, there won’t be any excuse for you to skip out on it. An added bonus: the dishes are nutritious and delicious!

Overnight Oatmeal from Greatist.com

Ingredients:

½ cup milk
1/3 cup rolled oats

½ a banana, mashed
¼ cup chopped nuts
Cinnamon

 The night before, combine all of the ingredients into a sealed plastic container, sprinkling the desired amount of cinnamon on top. Come morning, the oatmeal will be ready for you to eat before you head off to work or classes. The oatmeal can be heated up in the microwave as well

Apples and Almond Butter

Ingredients:

1 apple, sliced
Almond butter

Your choice of topping (for example: granola, flax seeds, or chia seeds) Spread a thick layer of almond butter onto each slice of apple, and sprinkle granola, flax seeds, chia seeds, or another topping on top of the slices. This simple breakfast can be eaten right away, or stored in a plastic container or with plastic wrap and taken on the go.

Ingredients:

2 tbsp. salsa
¼ cup cheddar cheese, shredded
¼ cup fresh cilantro
1 egg, beaten
4 egg whites, beaten
½ cup diced lean ham
1 8” whole-wheat tortilla

In a skillet, saute diced ham over medium heat, until the surface starts to brown. Place the cooked ham in the tortilla. In the skillet, scramble egg and egg whites together with the cilantro. Add the eggs to the tortilla, and top with cheese and salsa. Fold and enjoy.

Breakfast Fig and Nut “Cookies”

 Ingredients:

¾ cup packed brown sugar
¼ cup butter, melted
2 eggs
¼ cup finely chopped dried figs
¼ cup sweetened dried cranberries
1 tsp. vanilla extract
1 cup of all-purpose flour
½ cup whole wheat flour
½ cup unprocessed bran
½ tsp. baking soda
¼ tsp. ground cinnamon
¼ tsp. ground allspice
¼ cup sliced almonds
2 tsps. Sugar

Preheat oven to 350 degrees.

Combine first three ingredients into a large bowl. Stir in chopped gifs, cranberries, and vanilla. Combine flours, bran, baking soda, cinnamon, and allspice, stirring with a whisk. Add the flour mixture to the egg mixture, and stir just until moist. Gently fold in the almonds.

 Drop by ¼ cup measures four inches apart on two baking sheets lined with parchment paper. Sprinkle evenly with sugar. Bake at 350 degrees for 12 minutes or until almost set. Cool for two minutes on pans. Remove, and cool completely on wire racks.
